S’more Cookie Bars

Ingredients:

For the Cookie Base:

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 1/4 cups all-purpose flour

3/4 cup graham cracker crumbs (about 7-8 full sheets)

1/2 teaspoon baking soda

1/4 teaspoon salt

For the Filling:

2-3 full-size milk chocolate bars (e.g., Hershey’s), or 1 1/2 cups chocolate chips

1 1/2 cups mini marshmallows

Instructions:

Prepare the Oven and Pan:

Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

Make the Cookie Base:

In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Add the egg and vanilla extract, and mix well.

In a separate bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until combined.

Assemble the Bars:

Press half of the cookie dough evenly into the bottom of the prepared pan.

Arrange the chocolate bars or sprinkle chocolate chips over the dough layer.

Spread the mini marshmallows evenly over the chocolate layer.

Press the remaining cookie dough over the marshmallows. (It’s okay if some marshmallows peek through.)

Bake:

Bake for 20-25 minutes, or until the top is golden brown and the edges are set.

Allow the bars to cool completely in the pan before cutting them into squares.

Serve and Enjoy:

Cut into squares and enjoy your delicious s’more cookie bars!
