The Best Beef Tips

Ingredients:

2 pounds beef sirloin or tenderloin, cut into bite-sized pieces

Salt and pepper to taste

1/4 cup all-purpose flour

2 tablespoons olive oil or vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 cup beef broth

1/2 cup red wine (optional)

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon smoked paprika (optional)

2 tablespoons butter

Chopped fresh parsley for garnish (optional)

Instructions:

Season the beef pieces with salt and pepper, then toss them in the flour until evenly coated.

Heat the oil in a large skillet or frying pan over medium-high heat. Add the beef pieces in batches and brown them on all sides. Remove the browned beef from the skillet and set aside.

In the same skillet, add the chopped onion and garlic. Cook, stirring occasionally, until softened and fragrant, about 3-4 minutes.

Return the browned beef to the skillet. Add the beef broth, red wine (if using), Worcestershire sauce, soy sauce, tomato paste, thyme, rosemary, and smoked paprika (if using). Stir to combine.

Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet and let the beef simmer gently for about 1 to 1 1/2 hours, or until the beef is tender.

Stir in the butter until melted and the sauce has thickened slightly.

Taste the beef tips and adjust seasoning with salt and pepper if needed.

Serve the beef tips hot, over rice, noodles, or mashed potatoes. Garnish with chopped fresh parsley if desired.
